Apple oatmeal muffins

Ingredients

2 large apples (peeled |
cut into small cubes) |
150 g oatmeal |
150 g whole-wheat flour |
2 eggs |
120 ml (vegetable) milk |
80 ml honey or agave syrup |
2 teaspoons cinnamon |
1 teaspoon baking powder |
1 teaspoon vanilla extract |
Handful sultanas or nuts (optional) |
Preparation
- Preheat the oven to 180°C and grease a muffin tin or use muffin tins.
- In a bowl, mix the oatmeal, wholemeal flour, cinnamon and baking powder.
- In another bowl, beat the eggs and add the milk, honey and vanilla extract. Mix well.
- Add the wet ingredients to the dry ingredients and stir to form a batter. Then add the apple pieces (and sultanas or nuts, if you like).
- Divide the batter among the muffin tins and bake the muffins for about 20-25 minutes in the preheated oven, or until a toothpick comes out clean.
- Let the muffins cool for a few minutes before removing them from the moulds.
For an extra twist, sprinkle some ground almonds or sunflower seeds over the muffins before baking! Eat well and enjoy these fruity muffins!
