Sweet breakfast muffins with banana, kiwi and grapes

Sweet breakfast muffins with banana, kiwi and grapes

132gr fruit p.p.

Ingredients

50g sultanas
200g oatmeal
1 teaspoon cinnamon
2 teaspoons baking powder
2 ripe bananas
2 eggs
250ml semi-skimmed milk
250g blue grapes
2 kiwis
200ml semi-skimmed yoghurt
muffin pan
10 paper cake tins

Preparation

  1. Preheat the oven to 175 °C.
  2. Wash the sultanas and pat them dry.
  3. Mix the oatmeal with the cinnamon and baking powder.
  4. Peel and mash the bananas.
  5. Whisk the eggs and milk into the bananas until smooth. Whisk this into the oatmeal.
  6. Divide the batter among the cake pans and place them in the muffin tin.
  7. Bake the muffins in the middle of the hot oven for about 25 minutes.
  8. Clean the fruit. Halve the grapes and cut the kiwis into half slices.
  9. Let the muffins cool and serve with a scoop of yoghurt and fresh fruit.
