Banana bread with walnuts

50gr fruit p.p.
Ingredients
4-5 ripe bananas |
50ml oil |
50g honey |
2 eggs |
1 teaspoon cinnamon |
250g self-rising baking flour |
100g wholemeal flour |
75g walnuts |
Preparation
Overripe bananas on the fruit bowl? Make yourself a healthy and delicious banana bread! This recipe with honey, eggs, cinnamon, wholemeal flour and walnuts is going to help you do just that.
- Brush the mould thinly with oil.
- Preheat the oven to 175° C.
- Peel the bananas and mash the flesh with a hand blender or in a food processor.
- Whisk in the oil, honey, eggs and 50 ml water.
- Mix the cinnamon into the self-rising baking flour and the wholemeal flour. Mix this into the mashed bananas.
- Coarsely chop the walnuts and spoon them into the dough.
- Transfer the mixture into the mould.
- Bake the bread in the moderately hot oven for 50-60 minutes until cooked and browned.
- Prick the bread with a skewer to see if it is done yet. If the skewer comes out dry, the bread is done.
- Let the bread rest in the mould for 15 minutes.
- Tip the bread onto a wire rack and let it cool.
- Cut the bread into about 12 slices. If necessary, pack it in portions in freezer bags and freeze.
