


Kiwi



The kiwi is an oval fruit. The skin is dark green/brown and slightly hairy. In a green kiwi, the flesh is grass-green in colour and surrounds a white core. The flesh contains small, black, edible seeds. Kiwis also come in a yellow variety. This one is slightly sweeter and has a smooth skin. Ripe kiwis are best stored in a cool place.

Storage
Is the kiwi not yet ripe? Then store the kiwi on a fruit tray to allow it to ripen.
Want to speed up ripening? Then put the kiwis in a paper bag together with pears, apples or bananas.
Ripe kiwis can be kept refrigerated (12-15°C) for around 2-6 days. Unripe kiwis will keep for 1 to 3 weeks in the fridge.
How can I tell if a kiwi is no longer good? The kiwi then goes mouldy, has lost flavour or has dried out. You can recognise this decay by looking, smelling or even tasting.
Prepare
You can halve a kiwi and peel it or peel and slice it.
Hairless mini kiwis and yellow kiwis can be eaten with peel and all. You can also eat the green kiwi with its skin, you can brush off the hairs if necessary.
Be careful when combining kiwi and milk products or gelatine in a dish. Fresh kiwi contains a substance (enzyme) that breaks down proteins. Milk products then become watery and acquire a bitter aftertaste, and gelatine loses its binding power. Canned or blanched (briefly boiled) kiwi does not have this effect. The same goes for pineapple, mango and papaya!
