Aubergines sweet & sour

250gr vegetables p.p.
Ingredients
2 persons
4 sprigs of coriander |
1 tablespoon brown soft sugar |
1 large or 2 small aubergines |
piece of ginger root (approx. 1 cm) |
1 clove of garlic |
½ dl vegetable stock with less salt |
2 tablespoons vinegar |
1 onion |
Preparation
1. Clean and chop the onion and garlic small.
2. Peel and finely grate the piece of ginger root.
3. In a pan, melt the caster sugar on low heat.
4. Add the onion, garlic and grated ginger and warm briefly.
5. Wash the aubergine and remove the stem end. Halve the aubergine lengthwise and cut the halves into slices.
6. Pour the vinegar and stock into the onion mixture.
7. Add the aubergine slices and stew the vegetables for 10 minutes until tender.
8. Season the dish with pepper.
9. Wash the coriander and sprinkle on top.
Menu suggestion: Delicious with white beans and potatoes.
