Basque vegetable dish with egg

585gr vegetables p.p.
Ingredients
2 persons
1 aubergine |
1 chilli |
1 teaspoon dried thyme |
4 eggs |
1 courgette |
1 tablespoon olive oil |
1 onion |
1 clove garlic |
1 red and 1 yellow pepper |
Preparation
1. Clean and slice the aubergine.
2. Clean the rest of the vegetables: slice the onion, the peppers, the chilli pepper and the courgette.
3. Heat the oil and fry the onion until translucent, then squeeze out the garlic clove.
4. Add the other vegetables with pepper and thyme and slowly stew them on a low heat until tender.
5. Break the eggs onto the vegetables and let them set.
Menu suggestion: Delicious with potatoes.
