Green bean salad with egg and lemon

Green bean salad with egg and lemon

225gr vegetables p.p.

Ingredients

2 persons

5 stuffed olives
1 tablespoon oil
±2 teaspoons honey
450g green beans
1 lemon
4 eggs

Preparation

1. Clean and break the green beans once.
2. Cook the green beans for 8-10 minutes just until tender.
3. Boil the eggs hard for 10 minutes.
4. Slice the olives.
5. Make a dressing from the juice of the lemon, oil, pepper and honey.
6. Mix the dressing and olives into the green beans and leave to cool.
7. Cut the eggs into wedges and gently spoon them in.

Menu suggestion: Delicious with wholemeal baguette.
