Carrot salad with black sesame seeds by Joke Boon

105gr vegetables p.p. & 35gr fruit p.p.
Ingredients
325 g carrot peeled |
1 red onion peeled |
1 crisp apple (Jonagold or Elstar) core removed |
50 g yellow sultanas |
1 tsp black sesame seeds |
Dressing: |
1 lemon squeezed |
3 tbsp olive oil |
2 tsp sumac |
2 tsp ground cumin |
Preparation
A nice fresh carrot salad that looks exciting because of the black sesame seeds. I grate the carrot, apple and onion in the food processor, then this salad is on the table in no time.
1. Finely grate the carrot, onion and apple. This is extremely quick with the food processor. Put in a large salad bowl.
2. Mix in the sultanas and sesame seeds.
3. Whisk a dressing from the lemon juice, oil and spices. Spoon this through the carrot salad.
4. You can eat the salad immediately or store in a sealed container in the fridge for a few days.
