Carrot salad with orange

200gr vegetables p.p. & 65gr fruit p.p.
Ingredients
2 persons
| 400 grams of winter carrots |
| 1 orange |
| ± 1 tablespoon of lemon juice |
| 6 sprigs of chives |
Preparation
- Scrape and finely grate the carrots.
- Mix the lemon juice into the grated carrots.
- Scrub the orange clean and grate some of the zest.
- Peel the orange and cut it into small pieces. Collect the juice.
- Mix the orange pieces, grated zest and orange juice with the grated carrot and leave the salad to cool well.
- Wash the chives, cut them small and sprinkle them over the salad.
