Carrot salad with orange

Carrot salad with orange
With seasonal products

200gr vegetables p.p. & 65gr fruit p.p.

Ingredients

2 persons

400 grams of winter carrots
1 orange
± 1 tablespoon of lemon juice
6 sprigs of chives

Preparation

  1. Scrape and finely grate the carrots.
  2. Mix the lemon juice into the grated carrots.
  3. Scrub the orange clean and grate some of the zest.
  4. Peel the orange and cut it into small pieces. Collect the juice.
  5. Mix the orange pieces, grated zest and orange juice with the grated carrot and leave the salad to cool well.
  6. Wash the chives, cut them small and sprinkle them over the salad.
