Cauliflower mimosa

345gr vegetables p.p.
Ingredients
2 persons
1 shallot |
½ tablespoon liquid margarine |
1 egg |
nutmeg |
1 small cauliflower |
Preparation
1. Clean the cauliflower. Divide the cauliflower into florets and cut the stems into pieces.
2. Cook the cauliflower in little water for 8-10 minutes until tender.
3. Boil the egg hard for 10 minutes.
4. Clean and chop the shallot. Fry the shallot in the margarine until soft.
5. Peel the egg and chop it small.
6. Mix the egg crumbs into the shallot and season with some nutmeg.
7. Put the drained cauliflower in a bowl and sprinkle the mimosa mixture on top.
Menu suggestion: Delicious with a vegetarian slice and mashed potatoes.
