Chicken with chestnut mushrooms by Joke Boon

175gr vegetables p.p.
Ingredients
2 persons
1 tablespoon oil |
1 onion (finely chopped) |
1 garlic clove (grated) |
1 teaspoon dried thyme |
200 grams chicken breast (in small 1 x 1 cm cubes) |
250 grams chestnut mushrooms (sliced) |
freshly ground pepper |
1 tablespoon ketjap asin |
Preparation
These chicken cubes taste really good with the Fennel with sweet potato from the oven or with the Merry Brussels sprout rice. Also delicious with jacket potatoes and a fresh salad, for example courgette tzatziki.
Preparation:
1. Heat the oil in a large frying pan. Stir-fry the onion, garlic and thyme for 5 minutes.
2. Sprinkle the diced chicken with freshly ground pepper and fry for 3 minutes, stirring continuously, along with the onion and other seasonings.
3. Then add the mushrooms and fry over medium heat for 3-5 minutes, while stirring, until the mushrooms are brown.
4. Add the soy sauce and fry for another 1 minute before serving.
Menu suggestion: Delicious with fennel and sweet potato from the oven
