



Chestnut mushroom




The chestnut mushroom consists of somewhat firmer flesh and has a light, nutty flavour that is somewhat drier and spicier than the common mushroom. After the white mushroom, the chestnut mushroom is the most widely grown mushroom in the Netherlands. Chestnut mushrooms grow at a lower temperature than white mushrooms. Also, fewer mushrooms grow per square metre.

Storage
Keep chestnut mushrooms in the fridge. They retain their quality best at a temperature of between 4° and 7°C. They will then keep for 7 days.
It is best to leave the chestnut mushrooms in the packaging in which they were packed. If they are loose, do not put them in a sealed plastic bag. This suffocates the chestnut mushrooms, making them moist and unsightly. Chestnut mushrooms need to 'breathe', in a paper bag or a dry tea towel will do.
Do not store chestnut mushrooms with strong-smelling vegetables, such as leeks and onions. Chestnut mushrooms easily pick up odours. Do not store them with fruit either, as they will deteriorate faster.
How can I tell if chestnut mushrooms are no longer good? Chestnut mushrooms are mouldy, limp or have a sour smell. You can quickly recognise decay by looking, smelling or even tasting.

Cleaning chestnut mushrooms
Wipe the chestnut mushrooms clean with a kitchen paper or mushroom brush. Do this only just before cooking.
You clean chestnut mushrooms dry. Do not wash them, as they will fill up with water and lose their flavour.
