

Field mushroom


The field mushroom is also called aniseed mushroom because of its aniseed-like taste and smell. It is one of the largest edible mushroom species in existence. The colour of the cap is pale yellow. The stem is longer than the stem of the white mushroom and the cap smaller but higher.

Storage
Field mushrooms can be stored in the fridge for 2-3 days. The optimum storage temperature is 2°C. The cap can pop open easily, but this does not affect the flavour.

After cleaning, cut off the lower part of the stalk, after which the mushroom can be sliced or quartered.
Be careful not to cook them too long, otherwise the typical aniseed flavour will disappear, which is a shame!
