Chicory salad with pomegranate seeds

220gr vegetables p.p. & 25gr fruit p.p.
Ingredients
2 persons
50g pomegranate seeds (fresh or frozen) |
1 spring onion |
2 tablespoons olive oil |
vinegar or lemon juice |
3 chicory bushes (approx. 400g) |
Preparation
1. Clean and chop the spring onion small.
2. Whisk a dressing from the olive oil, 1 tablespoon water, vinegar and pepper.
3. Clean the chicory and cut the stalks into strips. Mix in the spring onion, dressing and pomegranate seeds.
Menu suggestion: Serve with an unbreaded pork cutlet and potatoes.
