Fennel citrus salad

Fennel citrus salad

180gr vegetables p.p. & 140gr fruit p.p.

Ingredients

2 persons

1 orange
1 tablespoon olive oil
1 large fennel tuber
1 (red) grapefruit

Preparation

1. Peel the orange and grapefruit thickly and cut the segments out of the membranes. Halve the grapefruit segments.
2. Collect the juice and make a dressing with the oil and some pepper.
3. Clean the fennel and shave or cut the tuber into thin slices. Save some of the fine fennel green.
4. Place the fennel and fruit in a bowl and drizzle the dressing over. Garnish with some finely chopped fennel greens, if desired.

Menu suggestion: Delicious with lentils and potatoes.
