Fennel salad with apple

360gr vegetables p.p. & 70gr fruit p.p.
Ingredients
2 persons
lemon juice |
2 fennel tubers |
1 tablespoon (olive) oil |
1 teaspoon mustard |
1 green apple |
Preparation
1. Make a dressing from the oil, mustard and some lemon juice.
2. Clean the fennel and save the fennel greens for garnish.
3. Slice or shave the fennel very finely.
4. Wash the apple, cut into wedges and remove the core. Cut the apple into thin slices.
5. Mix the dressing and apple with the fennel and sprinkle with the fennel greens.
Menu suggestion: Delicious with salmon and oven-baked potatoes.
