Goat cheese sandwich with redcurrants

17gr vegetables p.p. & 67gr fruit p.p.
Ingredients
| 2 wholemeal baguettes (250g each) |
| Halvarine |
| 240g fresh goat's cheese 45+ |
| 200g redcurrants |
| 3 teaspoons honey |
| 2 apples |
| 4 tablespoons pine nuts |
| 60g corn salad (washed) |
| 10g fresh chives |
| black pepper |
Preparation
- Start by toasting the pine nuts, which gives extra flavour! Toast the seeds in a hot pan on low heat without oil. Stay with them, shake regularly and remove them from the pan when they are light brown.
- Next, rise the redcurrants from the stalk.
Tip: you can easily do this with a fork! - Add the redcurrants and honey together in the heated pan. No need to add oil/butter here!
- Simmer until the redcurrants have softened.
- Keep stirring meanwhile, the jam may bubble a little!
- When you get a jam, the pan can be removed from the heat.
- Cut the baguette in half.
- Grill the baguette in a grill pan until briefly brown.
- Wash the chives and chop finely.
- Wash the apples, remove the core and cut into slices/slices.
- Spread the low-fat margarine and then the goat's cheese on the bread.
- Top the sandwich with the apple, homemade redcurrant jam, chives, pine nuts and lettuce.
- Sprinkle with black freshly ground pepper.
Tip: should you not like goat cheese, light herb cheese is a good alternative!
