Goat cheese sandwich with redcurrants

Goat cheese sandwich with redcurrants

17gr vegetables p.p. & 67gr fruit p.p.

Ingredients

2 wholemeal baguettes (250g each)
Halvarine
240g fresh goat's cheese 45+
200g redcurrants
3 teaspoons honey
2 apples
4 tablespoons pine nuts
60g corn salad (washed)
10g fresh chives
black pepper

Preparation

  1. Start by toasting the pine nuts, which gives extra flavour! Toast the seeds in a hot pan on low heat without oil. Stay with them, shake regularly and remove them from the pan when they are light brown.
  2. Next, rise the redcurrants from the stalk.
    Tip: you can easily do this with a fork!
  3. Add the redcurrants and honey together in the heated pan. No need to add oil/butter here!
  4. Simmer until the redcurrants have softened.
  5. Keep stirring meanwhile, the jam may bubble a little!
  6. When you get a jam, the pan can be removed from the heat.
  7. Cut the baguette in half.
  8. Grill the baguette in a grill pan until briefly brown.
  9. Wash the chives and chop finely.
  10. Wash the apples, remove the core and cut into slices/slices.
  11. Spread the low-fat margarine and then the goat's cheese on the bread.
  12. Top the sandwich with the apple, homemade redcurrant jam, chives, pine nuts and lettuce.
  13. Sprinkle with black freshly ground pepper.

Tip: should you not like goat cheese, light herb cheese is a good alternative!
