Redcurrant granola bowl

82gr fruit p.p.

Ingredients

100 grams redcurrants
2 medjoul dates
1 tsp vanilla flavouring
1/4 tsp ground cardamom
Water
75 grams coarse oat flakes
75 grams nut mix
55 grams seed mix
20 grams buckwheat grains
4 soaked plums
1 tablespoon sunflower oil
1/2 tsp biscuit & speculaask spices
750 ml low-fat Greek yoghurt
8 bunches of redcurrants
2 kiwis

Preparation

Indulge breakfast with redcurrant sauce swirl and homemade granola!

  1. Score 100 grams of redcurrants from the bunch with a fork and wash clean with water.
  2. Put the redcurrants, dates, cardamom and vanilla flavouring in a small saucepan and add just as much water until everything is just submerged. Simmer on a low heat (+/- 5 min), until everything is soft.
  3. Blend with a hand blender until smooth and leave to cool in the fridge.
  4. Heat a frying pan and toast the oat flakes, mixed nut mix, seed mix and buckwheat kernels for about 5 min, until the granola is golden brown and it smells good.
  5. Finely chop the prunes.
  6. Add the sunflower oil, chopped plums and biscuit & speculaas spices and roast for 2 minutes.
  7. Remove the pan from the heat.
  8. Eat the granola warm or leave to cool in the fridge for extra crunch.
  9. Fill 4 bowls with yoghurt and make a nice swirl with the berry sauce.
  10. Cover the yoghurt with the granola.
  11. Wash a total of 8 bunches of redcurrants.
  12. Clean and slice/chop the kiwis.
  13. Garnish with the kiwi and 2 redcurrant bunches per bowl.

Tip: The redcurrant sauce and granola can be kept refrigerated for one week! Short on time? Then use your favourite granola with crunchy nuts!

No cardamom in the house? Then use ½ tsp cinnamon or a cinnamon stick. No vanilla flavouring at home? Use star anise. No buckwheat kernels? Then use (crushed) flaxseed or take an extra 20 grams of oat flakes.
