leek curry with beef strips

300gr vegetables p.p.

Ingredients

2 persons

1 tablespoon curry paste (jar)
400g pre-cut leeks
½ can of diced tomatoes without salt
1 tablespoon shaved almonds
150g beef strips
1 tablespoon oil

Preparation

1. Toast the almonds in a dry frying pan until golden brown.
2. Put the leeks with the diced tomatoes in a pan and braise the vegetables for 10 minutes until tender.
3. Heat the oil in a wok or frying pan and stir-fry the meat strips for a few minutes until brown and cooked. Briefly fry the curry paste with it.
4. Spoon the meat onto the leeks.
5. Sprinkle with the slivered almonds.

Menu suggestion: Delicious with brown rice.
