Leeks are an aromatic, spicy vegetable. Leeks belong to the garlic family which also includes onion, chives and garlic. And you can smell it! There are winter, autumn and summer leeks. Winter leek is thicker and firmer and colours from grey-green to blue-green. Summer and autumn leeks have a long, thin shaft with yellow-green leaves with a fine texture.

    Leeks can be kept in the fridge for up to 2-3 weeks.

    Ready-cut leeks should not be kept in the fridge for more than a day.

    Raw leeks can be kept in the freezer for up to 12 months. Just before freezing, blanch for 1-6 minutes (heat briefly).

    You can keep leftover cooked leeks in a sealable container in the fridge for 2 days or in the freezer for 3 months.

    Cut off the foot. You can use the whole leek, including the green part!

    Leeks can contain a lot of sand. You can remove it like this: cut the leeks in half lengthwise from the bottom. Rinse the halves under running water and fold the leaves apart. Drain the vegetables in a colander and cut into large or small pieces.

    Cooking: 10 - 13 minutes

    Steaming: 15 - 20 minutes
