Lemon courgette

355gr vegetables p.p.
Ingredients
2 persons
1 tablespoon liquid margarine |
½ lemon |
1 small onion or shallot |
1-2 courgettes |
Preparation
1. Peel and chop the onion small.
2. Clean the courgette and cut it lengthwise. Cut the halves into thick slices.
3. Fry the onion softly in the margarine. Add the courgette slices.
4. Grate some lemon zest over them and add some lemon juice.
5. Stew the courgette for 8 minutes until tender. Season the vegetables with some pepper.
Menu suggestion: Delicious with fried chicken breast and mashed potatoes.
