Peasant omelette with peppers

Peasant omelette with peppers

185gr vegetables p.p.

Ingredients

2 persons

2 yellow peppers
4 tablespoons semi-skimmed milk
50g grated 30+ cheese
4 eggs
1 tablespoon olive oil
pepper
1 onion

Preparation

1. Cut the sweet pepper into strips
2. Cut the onion vertically in half and then into slices
3. Beat the eggs with milk and freshly ground pepper. Stir the cheese into the egg mixture. Heat half a tablespoon of oil in a frying pan and fry an omelette in it. Fry 1 more omelette in this way and keep warm.
4. In another frying pan, heat another half tablespoon and fry the peppers and onion for about 5 minutes. Season the vegetable mixture with freshly ground pepper.
5. Divide the omelettes between 2 plates.
6. Divide the vegetable mixture over the omelettes and fold them in half. Enjoy!

Suggestion: Delicious with wholemeal bread!
