Ingredients
2 persons
1 large onion (approx. 150g) |
1 courgette |
1 green pepper |
1 tablespoon olive oil |
pepper |
1 tomato |
2 tablespoons cooking cream light |
2 teaspoons Provencal herbs |
Preparation
1. Peel and chop the onion.
2. Wash the courgette and cut into cubes.
3. Clean and dice the pepper.
4. Heat the olive oil in a frying pan and add the onion, courgette and pepper. Add the Provençal herbs and freshly ground pepper to taste. Braise the vegetables in a closed pan for 10-15 minutes until tender.
5. Score the underside of the tomatoes with a knife. Immerse the tomatoes briefly in boiling water and peel them. Halve the tomatoes and remove the seeds.
6. Puree the tomatoes in a food processor or with a hand blender. Stir the tomato puree into the vegetables and simmer for about 3 more minutes.
7. Add the cooking cream and continue to warm the dish while stirring. Enjoy your meal!
