Prawns with mango salsa

Ingredients
2 persons
½ mango |
½ shallot |
piece of chilli |
lime |
4 sprigs of coriander |
½ tablespoon of oil |
2 brown bread slices |
100 grams of Dutch or Norwegian prawns |
Preparation
- Cut the flesh of the mango from the stone, peel it and cut it into small cubes.
- Chop the shallot and pepper very finely.
- Wash the lime and cut a piece of the peel from the outer part. Cut the piece of zest very finely. Squeeze the lime.
- Wash the coriander and cut the spice small.
- Mix everything together.
- Leave the salsa in a cool place, covered, for a few hours.
- Toast the bread slices and cut them once diagonally.
- Place 2 triangles of bread on each plate. Spoon the salsa alongside and divide the prawns on top.
