Prawns with mango salsa

Prawns with mango salsa
With seasonal products

10gr vegetables p.p. & 70gr fruit p.p.

Ingredients

2 persons

½ mango
½ shallot
piece of chilli
lime
4 sprigs of coriander
½ tablespoon of oil
2 brown bread slices
100 grams of Dutch or Norwegian prawns

Preparation

  1. Cut the flesh of the mango from the stone, peel it and cut it into small cubes.
  2. Chop the shallot and pepper very finely.
  3. Wash the lime and cut a piece of the peel from the outer part. Cut the piece of zest very finely. Squeeze the lime.
  4. Wash the coriander and cut the spice small.
  5. Mix everything together.
  6. Leave the salsa in a cool place, covered, for a few hours.
  7. Toast the bread slices and cut them once diagonally.
  8. Place 2 triangles of bread on each plate. Spoon the salsa alongside and divide the prawns on top.
