Roasted courgette

250gr vegetables p.p.
Ingredients
2 persons
500 grams courgettes |
fresh or dried basil |
1 tablespoon (olive) oil |
Preparation
1. Preheat the grill or grill pan.
2. Wash the courgettes and cut into strips.
3. Sprinkle the vegetables with pepper and transfer to a low ovenproof dish.
4. Drizzle the oil over them.
5. Roast the vegetables under the grill or in a grill pan for 5-10 minutes until tender.
6. Sprinkle with basil.
7. Or put the vegetables in an aluminium barbecue dish and grill them on the barbecue for 5-10 minutes until tender.
Menu suggestion: Delicious with vegetarian meatballs stewed with tomato and potatoes.
