Time to rediscover forgotten vegetables

Forgotten vegetables are vegetables that are not as commonly bought and eaten today as they were in the past. These vegetables were once widely used in traditional cuisines, but have gradually fallen into oblivion.
Some examples of forgotten vegetables include parsnips, salsify, turnips (turnips), turnip greens, radish, purslane, Jerusalem artichoke (topinamburger), swede, chard and horseradish. These vegetables generally disappeared from view due to changing taste preferences, the rise of easy-to-store vegetables, and limited supply in supermarkets. Fortunately, more and more people are rediscovering these 'old favourites'.

Why eat forgotten vegetables?
Forgotten vegetables bring not only nostalgia to your plate, but also new flavours. They often have a unique flavour, think for example of the sweet, anise-like tone of parsnips or the nutty Jerusalem artichoke. Moreover, they add colour to your dishes and offer plenty of variety alongside standard vegetable options.

Where to buy forgotten vegetables?
You can find more and more forgotten vegetables at farmers' markets, organic shops, specialist vegetable shops or through local vegetable packets. They are also slowly reappearing in some supermarkets, especially in autumn. Do you see one lying around? Then try a forgotten vegetable. You might just discover a new favourite.
