





Corn






Maize is not actually a vegetable, but a cereal. We only eat the sweet corn, with its sweet, yellow grains. It has been grown in the Netherlands for over 30 years. Sweetcorn is in the spotlight and is eaten more and more. Besides the well-known yellow colour, there are also dark red, white, blue, violet and black varieties.
Preparation & storage
Storage
Wrapped in foil, maize will keep for around 3 days in the fridge. Cooked corn kernels can be kept in a tightly sealed plastic bag or container in the freezer for up to 12 months, at a minimum of -18ºC. Blanch the raw cobs for about 12 minutes before freezing.
Preparing maize
You can go either way with fresh sweetcorn. You can boil the corn, steam it, grill it on the barbecue, prepare it in the oven or bake it. Canned or jarred sweetcorn can be used directly in your meal, such as a Mexican tortilla, salad, stir-fry or omelette.
Cooking maize
Most people boil the corn cob. Cook the corn cobs for about 5-7 minutes. When the colour is dark yellow, the corn is cooked. Corn that has cooked for 20-30 minutes is tough and not tasty.
Steaming maize
If you want to preserve as many vitamins and minerals as possible, you can also steam the corn cob. Of course, clean the cob first. Then steam the cob. The sweetcorn is cooked when you can remove the kernels from the cob without much effort.
Corn on the barbecue
It's best to pre-cook the corn first, as described above. Cook the corn cobs briefly so that they are just barely cooked. Then grill the sweetcorn on the barbecue until the cob is a nice golden yellow with a dark brown grain here and there.
Baking the sweetcorn
Clean the corn cob and cut off the kernels. Add some olive oil to the pan and fry the grains over low heat for 5-10 minutes until al dente.
Roasting sweetcorn in the oven
You can also roast sweetcorn in oven. Clean the cob and roll it in aluminium foil. Then roast the cob in a preheated oven at 200 degrees in 20-25 minutes.

Freezer: 12 months
Cleaning
It is handy to cook the corn cob first and only then remove the kernels. You can then easily scrape them off with a fork. Do clean it first, of course.
Remove the bracts and white threads from the corn cob and cut off both ends. Wash the cobs. Do not add salt, as this hardens the grains.
