Happy brussel sprout rice

325gr vegetables p.p.
Ingredients
2 persons
150 g brown rice or 350 g cooked brown rice |
1-2 tbsp oil |
1 red onion chopped |
1 garlic clove grated |
1 tsp turmeric |
300 g carrot peeled and chopped |
150 g Brussels sprouts cleaned and sliced |
100 g corn kernels fresh/canned/frozen |
Freshly ground pepper |
1/2 bunch parsley coarsely chopped |
Preparation
Brussels sprouts are still widely available. In this cheerful rice, they play a colourful role together with carrot and corn.
1. Heat the oil in a frying or frying pan. Fry onion, garlic and turmeric for 5 minutes, stirring over medium-high heat.
2. Add the carrot and Brussels sprouts, stir-fry for 5 minutes. The vegetables will keep bite. (If you like vegetables cooked, fry for 8-10 minutes).
3. Spoon in the corn and rice, stir-fry for another 1 minute, until everything is well heated.
4. Mix in the parsley and season with freshly ground pepper.
Menu suggestion: Brussels sprout rice is delicious with fish, eggs or chicken with chestnut mushrooms.
