The shiitake (pronounced shie-ie-taake) is a mushroom from Japanese cuisine. The colour of the shiitake ranges from light brown to dark brown with different nuances. The stem is cream-coloured, as are the lamellae at the base of the cap. The flavour and aroma are spicy. The shiitake is delicious in a wok dish or in shiitake soup.

Preparation & storage

    Storage
    Store shiitake in the fridge, in its original packaging. You can then store shiitake for 1-2 weeks.

    You can also freeze shiitake. You can keep shiitake in the freezer for up to 3 months.

    Preparing
    Remove the stems, chop them finely and use them in soups or sauces, for example. Cut the hats in half or slice them. Small specimens can be kept whole.

    It is better not to cook shiitake.

    Instead, it is better

    • stir-fry in oil.
    • deep-fried in breadcrumbs.
    • stew in, for example, chicken stock with less salt.
    • grill with oil .
    • prepare in the oven in aluminium foil.

    For all methods: no longer than 5 minutes, otherwise the shiitake will become tough.

    Refrigerator: 1-2 weeks

    Cooking: 5-7 minutes
    Stir-frying: 2-4 minutes
    Microwave oven: 2-3 minutes
    Deep-frying: 2-4 minutes
    Grilling: 2-4 minutes
    Braising: approx. 10 minutes
    Steaming: approx. 6 minutes

    Cleaning shiitake

    Clean shiitake with a damp kitchen paper or mushroom brush. Do this just before cooking. This prevents loss of flavour.
