Braised courgette with onion and pepper

440gr vegetables p.p.
Ingredients
2 persons
1 large onion (approx. 150g) |
1 courgette |
1 green pepper |
1 tablespoon olive oil |
pepper |
1 teaspoon Provencal herbs |
2 tablespoons cooking cream light |
2 tomatoes |
Preparation
1. Peel and finely chop the onion.
2. Wash the courgette and cut into cubes.
3. Clean the pepper, remove the seeds and cut into pieces.
4. Heat the olive oil in a frying pan and add the onion, courgette and pepper. Add the Provençal herbs and pepper to taste. Braise the vegetables in a closed pan for 10-15 minutes until tender.
5. Mashed tomatoes: Score the underside of the tomatoes with a knife. Immerse the tomatoes briefly in a pan of boiling water and peel them. Halve the tomatoes and remove the seeds. Puree the flesh in a food processor or with a hand blender. Stir the tomato puree into the vegetables and simmer for another 3 minutes.
6. Add the cooking cream and continue to warm the dish while stirring. Enjoy!
