Fishcakes with green beans and mushrooms

Fishcakes with green beans and mushrooms

260gr vegetables p.p.

Ingredients

2 persons

500 grams potatoes
1 (red) onion
2 sprigs of parsley
1 can of tuna in water
1 teaspoon of grated lemon peel
150 ml semi-skimmed milk
2 whole-wheat rusks
400 grams of green beans
100 grams of mushrooms
2 tablespoons of liquid margarine
pepper
nutmeg

Preparation

Make your own fish cakes! A lot tastier, tastier and not at all difficult.

  1. Peel the potatoes. Boil the potatoes in a little water for about 20 minutes.
  2. Clean the onion. Chop a piece of onion very finely and the rest in shreds.
  3. Wash the parsley and chop it small.
  4. Drain the tuna.
  5. Mix the tuna with the finely chopped onion and 1 small cooked potato and season with the lemon zest, finely chopped parsley and some pepper. If necessary, add some milk to make it a cohesive mixture.
  6. Crush the rusks.
  7. Shape the fish mixture into 4 flat discs and roll them in the rusk crumbs.
  8. Clean the French beans. Cook the green beans in a little water for about 10 minutes.
  9. Fry the fishcakes in the hot margarine for 10 minutes until hot and lightly browned.
  10. Clean and slice the mushrooms. During the last few minutes, fry the rest of the onion and mushrooms along with the fishcakes.
  11. Bring the rest of the milk to the boil.
  12. Mash the rest of the potatoes and make a puree with the hot milk, pepper and nutmeg.
  13. Serve the fishcakes with the green beans and mashed potatoes.
