Hearty meal soup with calettes

100gr vegetables p.p.
Ingredients
300 gr Kalettes® |
400 gr potatoes |
1 red onion |
2 tbsp olive oil |
1 l vegetable stock with less salt |
40 ml cooking cream |
20 gr sunflower seeds |
pepper |
chilli powder |
Preparation
You can also make really good soup from kalettes! This meal soup is made extra hearty by the potatoes and slightly spicy by the chilli powder.
- Wash and clean the Kalettes. There is no need to cut the Kalettes small.
- Peel the potatoes and cut them into small cubes. Also finely chop the red onion.
- Heat the oil in a frying pan and fry the onion briefly. Add the diced potatoes and fry briefly. Then add the stock and the Kalettes. Simmer on a medium-high heat for about 30 minutes.
- In a small, dry pan, toast the sunflower seeds.
- Remove some of the Kalettes from the pan before mashing the soup and add the cooking cream. Season with freshly ground pepper and the chilli powder.
- Serve with the toasted sunflower seeds and the Kalettes kept aside.
