Hearty meal soup with calettes

100gr vegetables p.p.

Ingredients

300 gr Kalettes®
400 gr potatoes
1 red onion
2 tbsp olive oil
1 l vegetable stock with less salt
40 ml cooking cream
20 gr sunflower seeds
pepper
chilli powder

Preparation

You can also make really good soup from kalettes! This meal soup is made extra hearty by the potatoes and slightly spicy by the chilli powder.

  1. Wash and clean the Kalettes. There is no need to cut the Kalettes small.
  2. Peel the potatoes and cut them into small cubes. Also finely chop the red onion.
  3. Heat the oil in a frying pan and fry the onion briefly. Add the diced potatoes and fry briefly. Then add the stock and the Kalettes. Simmer on a medium-high heat for about 30 minutes.
  4. In a small, dry pan, toast the sunflower seeds.
  5. Remove some of the Kalettes from the pan before mashing the soup and add the cooking cream. Season with freshly ground pepper and the chilli powder.
  6. Serve with the toasted sunflower seeds and the Kalettes kept aside.
