Kalettes with chicken and sweet potato

150gr vegetables p.p.
Ingredients
2 persons
1 Pack of Kalettes |
1 tablespoon olive oil |
100 grams of chicken thigh |
1 onion finely chopped |
600 grams of cold coarsely chopped sweet potato (you buy about 670 grams in) |
½ teaspoon paprika |
2 eggs |
Pepper |
Preparation
On cold evenings, when you don't want to bother with a long time in the kitchen, but you're in the mood for something full of flavour, this recipe is a godsend!
1. Wash the Kalettes, remove the leaves from the stems and dry thoroughly. Be careful not to bruise the leaves.
2. Heat the oil in a frying pan and add the chicken and onion. Fry for about 8 minutes until the chicken is cooked and until the onion is soft.
3. Increase the heat, add the leaves of the Kalettes and stir-fry for about 1 minute until the leaves soften. Add the sweet potatoes, paprika and ground pepper. Fry everything for about 5 minutes or until the potatoes are hot and the Kalettes are soft.
4. Fry or poach the eggs(how do I poach an egg?).
5. Divide the dish between 2 plates. Place the fried or poached egg on top of the dish.
