Lentil soup

140gr vegetables p.p. & 35gr fruit p.p.

Ingredients

2 persons

1 onion
2 peppercorns
1 bay leaf
100g (red) lentils
1 small potato
100g sliced soup vegetables
1 small apple
1/2 red pepper
1 tablespoon oil

Preparation

1. Bring 4 dl water to the boil and add the onion, peppercorns, bay leaf and (red) lentils. Cook for about 30 minutes.
2. Peel and dice the potato.
3. Wash the pepper and cut into cubes.
4. Halfway through the above cooking time, add the potato, pepper and soup vegetables.
5. Dice the peeled apple and fry in the oil.
6. Stir the diced apple into the soup. Enjoy!
