Oriental stir-fried spinach

315gr vegetables p.p.
Ingredients
2 persons
1 shallot |
1 tablespoon oil |
½ red pepper |
1 tablespoon fish sauce |
1 kg spinach |
piece of ginger root (size of ½ inch) |
Preparation
1. Peel and finely grate the piece of ginger root.
2. Peel the shallot and chop it small.
3. Cut the piece of pepper into small rings.
4. Wash the spinach and drain the vegetables.
5. Heat the oil in a large wok or frying pan and stir-fry the ginger, shallot and pepper in it.
6. Add the spinach by batches until the vegetables have shrunk. Stir-fry the spinach for a few minutes until tender. Drain the liquid.
7. Flavour the vegetables with the fish sauce.
Menu suggestion: Delicious with fried chicken breast and potatoes.
