Salad with asparagus broccoli, tahini, honey and lemon

175gr vegetables p.p.
Ingredients
2 persons
1 lemon |
100g cherry tomatoes |
1 teaspoon honey |
1 tablespoon tahini (sesame paste) without salt |
250g asparagus broccoli |
Preparation
1. Cut any woody ends off the asparagus broccoli
2. Wash the vegetables and cook in little water for 4-5 minutes just until tender.
Wash the lemon and grate some of the zest.
3. Make a dressing from 1-1½ tablespoons of lemon juice, 1 tablespoon of water, the honey, tahini and grated lemon zest. 4. Mix this into the asparagus broccoli and leave to cool.
5. Wash the cherry tomatoes and halve them.
6. Mix the cherry tomatoes into the asparagus broccoli.
Menu suggestion: Delicious with chicken and potatoes.
