Salsify with mushrooms

325gr vegetables p.p.
Ingredients
2 persons
piece of onion |
½ tablespoon of liquid margarine |
100 grams of mushrooms |
½ lemon |
vinegar |
500 grams of salsify |
Preparation
1. Prepare a large bowl of water with a spoonful of vinegar in it.
2. Peel the salsify, using gloves if necessary as the salsify gives off a sticky substance. Cut the salsify into pieces and keep them in the water with vinegar until boiling.
3. Bring water to the boil and squeeze half the lemon over it. Cook the salsify pieces in the lemon water for about 15-20 minutes until tender.
4. Clean and slice the mushrooms.
5. Cut the piece of onion small.
6. Briefly fry the onion and mushrooms in the hot margarine.
7. Drain the cooked salsify and mix in the mushrooms.
Menu suggestion: Delicious with steak and potatoes.
