Stir-fried chicory with pomegranate

250gr vegetables p.p. & 75gr fruit p.p.
Ingredients
2 persons
1 small apple |
½ teaspoon cajun seasoning without salt |
½ pomegranate or 2 tablespoons pomegranate seeds |
500 grams chicory |
1 tablespoon oil |
Preparation
1. Using a spoon, tap the seeds out of half the pomegranate and remove the white membranes.
2. Clean the chicory and cut the bushes lengthwise into 6 segments.
3. Wash the apple and cut it into cubes.
4. Heat the oil in a frying pan or wok and stir-fry the chicory in it for a few minutes until tender.
5. During the last minute, fry the diced apple with it.
6. Season with the Cajun herbs and sprinkle with the pomegranate seeds.
Menu suggestion: Delicious with fried tempeh and potatoes.
