Tropical fruit salsa with red onion

115gr vegetables p.p. & 95gr fruit p.p.
Ingredients
2 persons
1 small ripe mango |
1 ripe avocado |
1/2 lime |
1/2 red pepper |
1/2 teaspoon cinnamon |
1/2 red onion |
coriander |
Preparation
1. Peel and finely chop the red onion.
2. Peel the mango. Cut the flesh into small cubes and place in a large bowl with the onion.
3. Remove the seeds from the pepper and finely chop it. Add the pepper to the mango.
4. Grate very thin rind from the lime and squeeze the lime further.
Halve the avocado, remove the stone and scoop out the flesh (keep the skin). Cut the flesh into small cubes and spoon in the lime juice.
6. Gently stir together mango, onion, pepper, avocado and cinnamon and fill the avocado peels with it. Alternatively, serve the salsa in a bowl. Garnish with the coriander. Enjoy!
