Warm courgette salad

300gr vegetables p.p.
Ingredients
2 persons
1 teaspoon thyme |
1 tablespoon oil |
10 basil leaves |
lemon juice |
1-2 courgettes |
Preparation
1. Wash the courgettes and remove the stem end.
2. Cut the courgettes into thick slices.
3. Heat the oil in a non-stick frying pan.
4. Stir-fry the courgette slices al dente in it.
5. Add the thyme and some pepper.
6. From the heat, add some lemon juice and tear off the basil leaves.
Menu suggestion: Delicious with grilled chicken breast and wholemeal couscous.
