With a salad, you can whip up a fresh and flavourful meal in no time at all. Whether you fancy a light lunch, a side dish for the barbecue or a hearty meal-in-a-salad: the possibilities are endless. By mixing and matching seasonal vegetables, grains, pulses or pasta, you can enjoy a surprising combination every time.

Endive as a surprising base

Lettuce isn’t the only vegetable that works well in a fresh salad. In this meal-in-a-salad, endive forms the base, complemented by cucumber, radishes, grated beetroot, apple, chicken and baby potatoes. A fresh honey and mustard dressing really brings the salad to life. You’ll discover that endive is far more versatile than just as an ingredient in a stew.

Fancy a classic? Then the salade niçoise is a delicious choice. This French meal-in-a-salad combines, amongst other things, mixed lettuce, haricots verts, tomato, pepper, potato, tuna and egg. Thanks to the fresh mustard and lemon dressing, it’s a complete meal that’s perfect for warm weather.

From lasagne to a salad

Have you had some pasta and have a bit left over? Don’t throw it away – use it to make a fresh meal-in-a-salad. Combine the pasta with vegetables such as cucumber, peppers and tomatoes, add some rocket or another type of lettuce, and finish it off with a light dressing. This is an easy way to give leftover pasta a new lease of life and enjoy a delicious summer meal.

Green bean salad

Green beans also work brilliantly in a salad. This meal-in-a-salad combines green beans with new potatoes, egg, walnuts, rocket and a mustard dressing. A nutritious meal that shows just how easily you can incorporate seasonal vegetables into a fresh lunch or evening meal.

For those who like to add fruit to a salad, the salad with green asparagus, burrata, ham and grilled nectarines comes highly recommended. The combination of grilled nectarines, green asparagus, creamy burrata and fresh herbs makes for a colourful dish full of summery flavours.
