The coconut is not a nut, but a drupe of the coconut palm. Coconut is also known as clapper. The coconut consists of 4 parts: the coconut fibre, the husk, the fibrous pulp and the coconut water. The pulp contains 40% fat, of which over 30% is saturated. You can also buy coconut milk, coconut cream, coconut fat or coconut flour.

    How should I store coconuts?

    Store coconuts in a cool (12-15°C) dry place. Then they will keep for several months.

    Fresh coconut left over? Store fresh coconut in the fridge for another 2-3 days.

    Once opened, you can keepcoconut water in the fridge for 1-3 days. For the exact storage period, follow the storage advice on the packaging.

    Once opened, coconut milk can be kept in the fridge for up to 4 days or in the freezer for 3 months.

    Once opened, coconut cream (santen) can be kept in the fridge for up to 1 month or in the freezer for up to 3 months.

    Once opened, coconut fat can be kept outside the fridge for 3 to 6 months.

    Coconut flour, once opened, can be kept in the pantry for more than a year.

    How do I know if the coconut is no longer good?

    The coconut is mouldy, dry or rancid. You can recognise this decay by looking, smelling or tasting.

    How do I clean a coconut?

    The coconut has three 'eyes', just like a bowling ball. Two 'eyes' are close together, the third eye is separate.

    You can pierce the third, soft eye with a screwdriver and a hammer. Tap the back of the screwdriver with the hammer; a few gentle taps should suffice. On a fresh coconut, you will hear a hissing sound when you pierce the flesh, this is a good sign.

    You can pour off the coconut water and drink it or store it.

    Next, use the hammer to crack the coconut. Use a spoon or sharp kitchen knife to loosen the pulp from the husk.
