



Salanova lettuce




The official name of butterhead lettuce is Salanova. This multi-leaf lettuce contains as many as two to four times more leaves than regular lettuce. In addition, the leaves are about the same size and shape. So Salanova has a compact, full head. The leaves are tender and soft in taste.

Store this lettuce, in its original packaging, in the crisper section of the fridge. Preferably keep the root ball moist, this way the lettuce will keep for the longest time.
Make sure the lettuce can breathe. Do you put lettuce in a plastic bag yourself? Don't put it away in a closed plastic bag. You can store lettuce in an open plastic bag if necessary.
In a warm place, lettuce gets limp quickly. Never store lettuce next to fruit because when fruit ripens, it releases the gas ethylene (formerly known as ethylene). Ethylene causes brownish-red spots on the veins of lettuce, lettuce then spoils faster.
How do I know the lettuce is no longer good? The lettuce is mouldy or wilted. You can recognise this decay by smelling, looking or tasting.
Preparation
With one cut, the lettuce falls apart and you have leaves of equal size. An apple corer will usually do the trick. You can also easily cut half the leaves from the stalk or 'pick' the few leaves you need.

If you still want to prepare the lettuce, you can use these preparation times:
Cooking: 4 - 6 minutes
Microwave oven: 5 - 7 minutes
Braising: 6 - 7 minutes
Steaming: approx. 10 minutes
Cleaning Salanova (red and green)
Wash lettuce well before use and drain. To drain, you can use a salad spinner if necessary. This lets you crank out all the moisture.
After washing, you can tear the leaves into pieces.
