Salad with venison ham and walnuts

Salad with venison ham and walnuts
With seasonal products

150gr vegetables p.p. & 220gr fruit p.p.

Ingredients

2 persons

30 g thinly sliced venison ham
6 fresh figs
200 g mixed lettuce
1 red onion cut into half rings
1 Elstar apple
1 tablespoon olive oil
1 tablespoon vinegar
1 teaspoon apple syrup
25 g walnuts
chervil chives or parsley if desired

Preparation

Dressing:

  1. Mix the apple syrup with the vinegar.
  2. Add the olive oil to this mixture while stirring.

Salad:

  1. Put the washed, mixed lettuce in a bowl.
  2. Wash the apple and cut into strips.
  3. Finely chop the red onion.
  4. Add the red onion, apple and half of the dressing.
  5. Season with freshly ground pepper.
  6. Dress the dressed salad in the centre of a spacious salad plate.
  7. Divide the ham slices between the plates and arrange them in florets against the salad.
  8. Divide the rest of the dressing between the plates and drizzle it nicely over the salad.
  9. Garnish the salad with wedges of fresh figs and chopped walnuts and a sprig of chervil, chives or parsley. Enjoy!

Menu suggestion: Delicious with a few slices of toasted wholemeal bread.
