Soft fruit salad

90gr vegetables p.p. & 75gr fruit p.p.
Ingredients
2 persons
1 tablespoon lemon juice |
pepper |
1 onion |
2 sprigs fresh mint |
1 tablespoon toasted almond chips |
1 teaspoon horseradish |
75 g mixed lettuce (frisee oak leaf and/or lollo biondo) |
75 g cooked chicken breast |
2 tablespoons low-fat cottage cheese |
150 g mixed soft fruit |
Preparation
1. Clean the soft fruit.
2. Fold the cottage cheese into the horseradish. Season with lemon juice and freshly ground pepper.
3. Cut the onion into fine rings.
4. Finely chop the mint.
5. Cut the chicken breast into thin slices.
6. Divide the lettuce between two large flat plates. Divide the chicken, onion and summer fruit on top. Sprinkle the salad with the almond chips and finely chopped mint. Enjoy!
