Soft fruit crostini with blueberries

145gr fruit p.p.
Ingredients
2 persons
125g blueberries |
125g blackberries |
4 sprigs of currants or redcurrants |
1 clove of garlic |
1 tablespoon of olive oil |
4 sprigs of thyme |
4 slices of wholemeal bread |
pepper |
60g fresh goat cheese |
Preparation
1. Preheat the grill to 250°C.
2. Clean the soft fruit.
3. Squeeze the garlic clove over the olive oil and mix in a small bowl.
4. Drizzle the wholemeal bread with the olive oil.
5. Toast the bread under the hot grill for about 2 minutes until golden brown.
6. Spread the bread with fresh goat cheese, spread the blueberries and blackberries on top. Sprinkle with the thyme leaves.
7. Heat for about 2 more minutes under the hot grill.
8. Sprinkle with freshly ground coarse pepper. Garnish with the redcurrants and serve immediately. Enjoy!
