Soft Fruit Pita

90gr vegetables p.p. & 125gr fruit p.p.
Ingredients
2 persons
250g strawberries |
1 bulb of ginger |
1 spring onion |
1 small avocado (approx. 130g) |
1 teaspoon curry powder |
2 heaped tablespoons of low-fat cottage cheese |
2 whole-wheat rolls |
2 leaves of lettuce (lollo bionda) |
Preparation
1. Wash the strawberries in cold water and remove the crowns. Cut them in half.
2. Bake the pita buns in an oven or toaster according to instructions on the packet.
3. Meanwhile, finely chop the ginger.
Cut the spring onion into thin rings.
5. Peel the avocado, remove the stone. Cut the flesh into strips. Sprinkle with freshly ground pepper.
Mix curry powder and ginger with the cottage cheese.
7. Cut open the pita bread on one side. Brush the inside with the cottage cheese. Place the lettuce on top and fill with avocado, strawberries and spring onion. Enjoy!
