


White radish



White radish is also known as rettich or daikon. White radish is the big sister of the well-known radish. It is a mega-sized, white carrot. White radish tastes milder, less peppery than a radish. The texture of white radish is slightly denser, less watery compared to radish.

Storage
You can store white radish for up to several weeks in a cool place outside the fridge. You can remove the foliage first. With foliage, white turnip greens can be kept for much shorter periods.
You can keep a cut white turnip in the fridge for up to a week. Cover the cut surface with cling film.
White radish is not suitable for freezing as both the flavour and crispy texture will deteriorate.
Prepare
Peel the white radish with a knife or peeler before use.
Not a fan of the sharp taste? Then peel slightly thicker if necessary. Most of the sharpness is in and just below the skin.
Then cut a slice off the butt and the top; this is usually hard and less tasty.
After that, you can slice or strip the white radish. If you are going to process the white radish raw, you can also use a grater.
Note that the beautiful white colour deteriorates quickly when exposed to air, then it soon turns a bit brownish. This has no effect on the flavour, but does look less attractive. A little lemon juice or other acid (vinegar) immediately after cutting prevents this.
