Dutch salad of radish, red leaves, apple and roasted mustard seed

95gr vegetables p.p. & 35gr fruit p.p.
Ingredients
| 2 teaspoons mustard seed |
| 2 tablespoons olive oil |
| approx. 1 tablespoon lemon juice |
| 2 bushes of red-leaved chicory or 1 bush of radicchio |
| 1 small radish |
| 1 apple |
Preparation
This Dutch salad with radish, red leaves, apple and roasted mustard seed is delicious as an appetiser, quick on the table and also 100% vegan!
- Heat a small pan and roast the mustard seeds in it until the grains open.
- Remove the pan from the heat and add the oil, 1 tablespoon of water and the lemon juice. Flavour the dressing with pepper and some lemon juice, if necessary.
- Wash the endives and loosen the leaves.
- Scrub the radish thoroughly. Shave the radish on a slicer or with a mandolin into very thin slices.
- Wash the apple, cut into quarters and remove the core. Shave the apple wedges into thin slices.
- Divide the vegetables and apple among 4 plates and drizzle the dressing over them.
