Green pilaf

250gr vegetables p.p.
Ingredients
1 medium onion |
2 cloves of garlic |
300 grams of frozen green peas |
600 grams of frozen leaf spinach |
250 grams of brown rice |
100 grams of sunflower seeds |
100 grams of soft goat cheese |
1/2 litre of vegetable stock (with less salt) |
teaspoon of cumin seeds |
teaspoon of cinnamon |
2 cm ginger (grated) |
2 sprigs of fresh thyme or 2 tablespoons of dried thyme |
pepper |
1 tablespoon of olive oil |
Preparation
Our top favourite: quick, simple and tasty! This green pilav with peas and spinach is a recipe from "our" Nancy and is packed with vegetables; as much as 250 grams.
- Chop the onion and fry it with pressed garlic cloves in oil
- Then fry the rice, sunflower seeds and cumin seeds for about 2 minutes until the rice is translucent
- Add the frozen spinach cubes (do not defrost) with ginger, cinnamon and thyme
- Pour in the stock until everything is just covered.
- Put the lid on the pan and simmer for about 15 minutes. If necessary, add water in between.
- Add frozen peas (not defrosted) for the last 5 minutes.
- Serve with the crumbled goat's cheese and fresh pepper.
