Green pilaf

250gr vegetables p.p.

Ingredients

1 medium onion
2 cloves of garlic
300 grams of frozen green peas
600 grams of frozen leaf spinach
250 grams of brown rice
100 grams of sunflower seeds
100 grams of soft goat cheese
1/2 litre of vegetable stock (with less salt)
teaspoon of cumin seeds
teaspoon of cinnamon
2 cm ginger (grated)
2 sprigs of fresh thyme or 2 tablespoons of dried thyme
pepper
1 tablespoon of olive oil

Preparation

Our top favourite: quick, simple and tasty! This green pilav with peas and spinach is a recipe from "our" Nancy and is packed with vegetables; as much as 250 grams.

  1. Chop the onion and fry it with pressed garlic cloves in oil
  2. Then fry the rice, sunflower seeds and cumin seeds for about 2 minutes until the rice is translucent
  3. Add the frozen spinach cubes (do not defrost) with ginger, cinnamon and thyme
  4. Pour in the stock until everything is just covered.
  5. Put the lid on the pan and simmer for about 15 minutes. If necessary, add water in between.
  6. Add frozen peas (not defrosted) for the last 5 minutes.
  7. Serve with the crumbled goat's cheese and fresh pepper.
